With a base in France as well as Napa Valley, author and food writer Patricia Wells opens her home, a historic French Provencal farmhouse, each year to a select number of cooking class participants. The goal is not simply to teach traditional techniques gleaned from France’s renowned culinary academies, but to instill a sense of the roots of the cuisine, employing greens, herbs, fruits, and vegetables from its own organic garden and other local sources.

A highlight of the weeklong program in English is cooking with fresh olives that come from Wells’ and her husband’s orchard, as well as with fragrant local honey. Students also partake of regional wines and, more importantly, imbibe what Wells terms the “art de vivre” during their stay in rustic southern France.
